Creamy Spinach and Ricotta Stuffed Shells

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups marinara sauce

Fresh basil, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: Boil a large pot of salted water and cook the jumbo pasta shells according to the package directions until al dente (usually around 8-10 minutes). Drain and set aside, spreading the shells out on a clean cloth to prevent sticking.

      Prepare the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, half of the mozzarella, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix well until all ingredients are evenly combined.

        Stuff the Shells: Using a spoon or a piping bag, carefully fill each shell with a generous tablespoon or more of the creamy spinach and ricotta mixture.

          Layer the Marinara Sauce: In a 9x13 inch baking dish, spread a thin layer (about 1 cup) of marinara sauce on the bottom to prevent the shells from sticking. Place the stuffed shells seam side up in a single layer in the dish.

            Add More Sauce: Pour the remaining marinara sauce over the stuffed shells, ensuring they are well-coated. Sprinkle the remaining mozzarella cheese on top.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

                Garnish and Serve: Remove from the oven and let it cool for about 5 minutes. Garnish with fresh basil if desired and serve warm.
