2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

8 oz (225g) fresh mushrooms, sliced (button or cremini)

4 cups fresh spinach, roughly chopped

1 cup heavy cream

½ cup grated Parmesan cheese

½ teaspoon dried oregano

½ teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the pasta and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
