Creamy Spinach and Cheese Stuffed Shells

12 jumbo pasta shells

1 cup ricotta cheese

1 cup fresh spinach, chopped (or ½ cup frozen spinach, thawed and drained)

1 cup mozzarella cheese, shredded

½ cup parmesan cheese, grated

1 large egg

1 tsp garlic powder

1 tsp onion powder

Salt and pepper, to taste

2 cups marinara sauce

½ cup heavy cream

Fresh basil or parsley for garnish (optional)

Instructions
 

Cook the Pasta: Begin by boiling a large pot of salted water. Cook the jumbo pasta shells according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Filling: In a large mixing bowl, combine the ricotta cheese, chopped spinach, half of the mozzarella cheese (½ cup), half of the parmesan cheese (¼ cup), egg, garlic powder, onion powder, salt, and pepper. Mix until well combined and creamy.

      Stuff the Shells: Preheat your oven to 375°F (190°C). Using a spoon, carefully fill each cooked shell with the creamy spinach and cheese mixture. Place the stuffed shells upright in a greased 9x13 inch baking dish.

        Prepare the Sauce: In a small saucepan, heat the marinara sauce over medium heat. Once warm, stir in the heavy cream and simmer for a few minutes until slightly thickened. Remove from heat.

          Assemble the Dish: Pour the creamy marinara sauce evenly over the stuffed shells. Sprinkle the remaining mozzarella and parmesan cheese on top for a gooey finish.

            Bake: Cover the baking dish with aluminum foil and bake for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Once baked, remove from the oven and let it sit for a few minutes. Garnish with fresh basil or parsley if desired. Serve hot and enjoy your creamy spinach and cheese stuffed shells!
