2 cups penne pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper, to taste

1 small onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 cup frozen corn

1 cup cherry tomatoes, halved

1 cup chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

1/2 cup sour cream

Fresh cilantro, chopped, for garnish

Instructions
 

Cook the pasta: Bring a large pot of salted water to a boil. Add penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the chicken: In a large skillet over medium heat, add olive oil. Once hot, add diced chicken, smoked paprika, cumin, chili powder, salt, and pepper. Cook until the chicken is browned and fully cooked, about 6-8 minutes. Remove chicken from the skillet and set aside.

      Sauté the vegetables: In the same skillet, add the diced onion and cook for 2-3 minutes until translucent. Add garlic, diced red bell pepper, frozen corn, and cherry tomatoes. Sauté for another 4-5 minutes until the vegetables are tender.

        Combine and create the sauce: Return the cooked chicken to the skillet. Add the chicken broth and bring to a simmer. Stir in the heavy cream and let it cook for about 3-4 minutes until slightly thickened.

          Add cheese and sour cream: Lower the heat and stir in shredded cheddar cheese and sour cream, mixing until well combined and creamy.

            Combine with pasta: Add the drained penne pasta back into the skillet, stirring gently to coat the pasta with the creamy chicken and vegetable mixture.
