4 cups fresh spinach leaves, washed and dried

1 ripe avocado, pitted and peeled

1 medium onion, chopped

2 cloves garlic, minced

3 cups vegetable broth

1 cup coconut milk

2 tablespoons olive oil

1 teaspoon lemon juice

Salt and pepper to taste

Optional: Croutons for garnish

Optional: Microgreens or fresh herbs for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute, until fragrant.

    Add Spinach: Gradually add the fresh spinach to the pot, stirring until wilted, approximately 3-4 minutes.

      Combine Ingredients: Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for about 10 minutes to allow the flavors to meld.

        Blend the Soup: Remove the pot from heat. Add the ripe avocado and coconut milk. Using an immersion blender, blend until the soup is completely smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup in batches to a standing blender.

          Season: Return the blended soup to the pot, if necessary. Stir in the lemon juice, and season with salt and pepper to taste. Heat the soup gently for a few more minutes to warm through.

            Serve and Garnish: Ladle the creamy soup into bowls. Top with croutons and sprinkle with microgreens or fresh herbs of your choice, if desired. Enjoy your comforting and nutritious bowl of soup!
