Creamy Roasted Pepper Sauce

3 large red bell peppers

1 tablespoon olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 cup heavy cream

1 teaspoon smoked paprika

1 teaspoon salt (or to taste)

1/2 teaspoon black pepper

1 tablespoon fresh basil, chopped (optional for garnish)

1 tablespoon lemon juice (optional for brightness)

1/4 cup grated Parmesan cheese (optional for added richness)

Instructions
 

Roast the Peppers: Preheat your oven to 425°F (220°C). Cut the bell peppers in half, remove the seeds and stems. Place them cut-side-down on a baking sheet. Drizzle with olive oil and roast in the oven for about 25-30 minutes or until the skins are charred and blistered. Remove from the oven and cover with foil for 10 minutes to steam, making the skins easier to peel. Once cooled, peel off the skins and set aside.

    Sauté the Aromatics: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 5-7 minutes until translucent and slightly caramelized. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Blend the Sauce: In a blender, combine the roasted peppers, sautéed onions and garlic, heavy cream, smoked paprika, salt, and black pepper. Blend until smooth and creamy. If desired, add lemon juice and Parmesan cheese for extra flavor and richness, blending again to combine.

        Adjust the Consistency: If the sauce is too thick, you can add a splash of water or more heavy cream to reach your desired consistency. Taste and adjust seasoning if needed.
