1 head of garlic

2 tablespoons olive oil

12 oz (340g) fettuccine or your preferred pasta

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon salt (adjust to taste)

½ teaspoon freshly cracked black pepper

1 teaspoon red pepper flakes (optional, for a bit of heat)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the individual cloves and drizzle with 1 tablespoon of olive oil. Wrap it in aluminum foil and roast for about 30-35 minutes, or until the cloves are soft and golden brown. Once done, let it cool slightly, then squeeze the roasted garlic into a small bowl and mash it with a fork to create a paste.

    Cook the Pasta: While the garlic is roasting, bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta.

      Make the Creamy Sauce: In a large skillet over medium heat, add the remaining 1 tablespoon of olive oil. Add the roasted garlic paste and sauté for 1-2 minutes until fragrant. Pour in the heavy cream, stirring to combine, and bring to a gentle simmer.

        Add Cheese and Seasoning: Gradually stir in the grated Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached. Season with salt, black pepper, and red pepper flakes (if using).

          Combine Pasta and Sauce: Add the cooked fettuccine directly into the skillet with the creamy garlic sauce. Toss well to coat the pasta evenly. Cook for an additional 2-3 minutes, allowing the flavors to meld.
