Creamy Roasted Cauliflower Dip

1 medium head of cauliflower, cut into florets

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and black pepper, to taste

½ cup cream cheese, softened

½ cup Greek yogurt

¼ cup grated Parmesan cheese

1 tablespoon lemon juice

2 tablespoons fresh chives, chopped (for garnish)

Optional: serve with pita chips, fresh veggies, or crackers

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Roast the Cauliflower: On a large baking sheet, toss the cauliflower florets with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread them out in an even layer. Roast in the preheated oven for 25-30 minutes, or until the florets are golden brown and tender, stirring halfway through for even roasting.

      Blend the Ingredients: Once roasted, let the cauliflower cool slightly. Transfer it to a food processor. Add the cream cheese, Greek yogurt, grated Parmesan cheese, and lemon juice. Blend until smooth and creamy. Taste and adjust seasoning with additional salt and pepper, if desired.
