12 oz cheese tortellini

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1 cup cucumbers, diced

1/2 cup red bell pepper, diced

1/3 cup fresh basil leaves, chopped

1/2 cup grated Parmesan cheese

1/2 cup creamy pesto sauce (store-bought or homemade)

1/4 cup olive oil

Salt and pepper to taste

Optional: toasted pine nuts for garnish

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: In a large mixing bowl, combine the halved cherry tomatoes, chopped spinach, diced cucumbers, and diced red bell pepper. Toss gently to mix.

      Combine Ingredients: Add the cooled tortellini to the vegetable mixture. Pour in the creamy pesto sauce and olive oil. Add the chopped basil and grated Parmesan cheese. Season with salt and pepper to taste.

        Mix It Up: Gently toss all the ingredients together until everything is well coated with the pesto sauce. Be careful not to break the tortellini.

          Chill: Cover the salad with plastic wrap or transfer it to an airtight container and let it chill in the refrigerator for at least 30 minutes before serving. This will allow the flavors to meld together.
