1 lb (450g) fresh gnocchi

2 medium chicken breasts, diced

1 cup fresh basil pesto (store-bought or homemade)

1 cup heavy cream

1 cup cherry tomatoes, halved

2 cups baby spinach

3 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper, to taste

Grated Parmesan cheese, for serving

Fresh basil leaves, for garnish

Cook the Gnocchi: In a large pot, bring salted water to a boil. Add the gnocchi and cook according to package instructions, usually until they float to the top (about 2-3 minutes). Drain and set aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook until golden brown and cooked through (about 5-7 minutes). Remove the chicken from the skillet and set aside.

      Make the Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer. Stir in the basil pesto and mix until well combined.
