Creamy Pesto Chicken Tortellini

1 pound cheese tortellini (fresh or frozen)

2 tablespoons olive oil

2 boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper, to taste

3 cloves garlic, minced

1 cup heavy cream

1/2 cup basil pesto (store-bought or homemade)

1/2 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

1 cup baby spinach

Fresh basil leaves, for garnish (optional)

Instructions
 

Cook the Tortellini: In a large pot of boiling salted water, cook the tortellini according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with salt and pepper. Add to the skillet and cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

      Make the Creamy Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds, until fragrant. Pour in the heavy cream and bring to a simmer. Slowly whisk in the basil pesto until well combined.

        Add Cheese & Vegetables: Stir in the grated Parmesan cheese until melted and the sauce is smooth. Add the cherry tomatoes and baby spinach. Cook for an additional 2-3 minutes or until the spinach has wilted and the tomatoes are slightly softened.

          Combine Ingredients: Return the cooked chicken to the skillet, then add the drained tortellini. Gently toss everything together until the tortellini is coated in the creamy pesto sauce. If the sauce is too thick, you can add a splash of chicken broth or pasta water to thin it out.
