4 cups sweet corn kernels (fresh, frozen, or canned)

1 cup cream cheese, softened

½ cup sour cream

½ cup mayonnaise

1 cup crumbled cotija cheese (plus extra for garnish)

1-2 jalapeños, finely diced (adjust for spice preference)

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

1 lime, juiced

Salt and pepper to taste

¼ cup fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Instructions
 

Prepare the Corn: If using fresh corn, grill or boil it until tender, then let it cool and cut the kernels off the cob. For frozen corn, thaw and drain. If using canned corn, drain and rinse.

    Combine Base Ingredients: In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Mix well until smooth and creamy.

      Add Flavorings: Stir in the crumbled cotija cheese, diced jalapeños, minced garlic, chili powder, cumin, smoked paprika, lime juice, salt, and pepper. Mix until everything is well incorporated.
