Creamy Mac & Cheese Muffin Cups

1 cup elbow macaroni

1 tablespoon olive oil

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 ½ cups milk (whole or 2%)

1 teaspoon Dijon mustard

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon smoked paprika

2 cups shredded sharp cheddar cheese

½ cup grated Parmesan cheese

1 large egg

Salt and black pepper, to taste

½ cup breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Your Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or butter to prevent sticking.

    Cook the Macaroni: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

      Make the Cheese Sauce: In a medium saucepan over medium heat, melt the butter and olive oil together. Once melted, whisk in the flour and cook for about 1 minute, stirring constantly.

        Add Milk and Seasonings: Gradually pour in the milk, whisking continuously to avoid lumps. Stir in the Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and black pepper. Cook for about 3-4 minutes until the mixture thickens slightly.

          Incorporate Cheeses: Remove the saucepan from heat and stir in the sharp cheddar cheese and Parmesan cheese until melted and creamy.

            Combine Pasta and Cheese Sauce: In a large mixing bowl, combine the cooked macaroni and the cheese sauce. Mix until the pasta is well coated.

              Add Egg for Binding: In a small bowl, lightly beat the egg and then fold it into the macaroni and cheese mixture. This will help to bind the muffins together.

                Fill Muffin Tins: Scoop a generous amount of the mac and cheese mixture into each muffin cup, filling them to the top. If desired, sprinkle the breadcrumbs on top for a crunchy finish.
