Creamy Lemon Kale Pasta with Crispy Crumbs

8 oz spaghetti or fettuccine

4 cups fresh kale, chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 lemon (juice and zest)

2 tablespoons olive oil

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 cup panko breadcrumbs

2 tablespoons unsalted butter, melted

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti or fettuccine according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Prepare the Crispy Crumbs: In a small skillet over medium heat, combine the panko breadcrumbs and melted butter. Stir continuously until the breadcrumbs are golden brown and crispy, about 3-5 minutes. Remove from heat and set aside.

      Sauté the Kale: In the same pot used for the pasta, add olive oil and heat over medium heat. Add the minced garlic and sauté until fragrant, around 1 minute. Then, add the chopped kale, red pepper flakes (if using), salt, and pepper. Cook for 4-5 minutes, or until the kale has wilted and is tender.

        Make the Creamy Sauce: Pour in the heavy cream, lemon juice, and lemon zest into the pot with the sautéed kale. Stir well to combine. Gradually add the Parmesan cheese while mixing until the cheese melts and the sauce is creamy. If the sauce is too thick, add some reserved pasta water until you achieve the desired consistency.

          Combine the Pasta and Sauce: Add the cooked pasta to the pot and toss well to coat all the noodles in the creamy lemon kale sauce. Adjust seasoning with salt and pepper as needed.

            Serve: Plate the pasta and top generously with the crispy panko breadcrumbs and a sprinkle of fresh parsley for a pop of color.
