12 oz fettuccine pasta

1 can (14 oz) artichoke hearts, drained and quartered

1 cup heavy cream

1 cup grated Parmesan cheese, plus extra for serving

Zest of 1 lemon

Juice of 1 lemon

2 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

1/4 teaspoon red pepper flakes (optional for a kick)

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté Garlic and Artichokes: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the quartered artichokes and cook for an additional 2-3 minutes until they are lightly golden.

      Make the Cream Sauce: Reduce the heat to low and pour in the heavy cream. Stir in the lemon zest, lemon juice, and grated Parmesan cheese. Mix until the cheese has melted and the sauce is smooth. If the sauce is too thick, add some reserved pasta water, a little at a time, until desired consistency is reached.
