Ingredients

4 medium zucchinis, spiralized into noodles (zoodles)

3 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

1 teaspoon red pepper flakes (optional, for heat)

Instructions

Prepare the Zoodles: Use a spiralizer to create zoodles from the zucchinis. Place the zoodles on a paper towel to absorb excess moisture while preparing the sauce.

Cook the Zoodles: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the zoodles and sauté for about 2-3 minutes until they are slightly tender. Remove them from the pan and set aside.

Make the Creamy Sauce: In the same skillet, add the remaining olive oil (2 tablespoons) and minced garlic. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Add Cream: Pour in the heavy cream and bring it to a gentle simmer. Stir occasionally to prevent sticking.

Incorporate Cheese: Gradually add the grated Parmesan cheese to the creamy mixture, stirring until it melts and combines to create a smooth sauce.

Season the Sauce: Add garlic powder, onion powder, salt, and pepper to taste. If desired, add red pepper flakes for a hint of spice.

Combine Zoodles with Sauce: Return the sautéed zoodles to the skillet, tossing them well in the creamy garlic Parmesan sauce. Cook for an additional 2-3 minutes, allowing the zoodles to soak up the flavors.

Serve: Remove the skillet from heat. Transfer the zoodles to serving plates, then garnish with fresh parsley. Optionally, sprinkle extra Parmesan on top before serving.
