8 oz (225 g) fettuccine or spaghetti

2 tablespoons olive oil

3 cloves garlic, minced

8 oz (225 g) cremini or button mushrooms, sliced

1 teaspoon dried Italian herbs (oregano and basil mix)

Salt and pepper, to taste

1 cup (240 ml) heavy cream

1/2 cup (50 g) grated Parmesan cheese

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Sauté Garlic and Mushrooms: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the sliced mushrooms and dried Italian herbs. Cook until the mushrooms are tender and browned, about 4-5 minutes.

      Create the Creamy Sauce: Lower the heat, and pour in the heavy cream, mixing well. Stir in the grated Parmesan cheese until melted and the sauce becomes creamy. If the sauce is too thick, add a little reserved pasta water until you reach the desired consistency.

        Combine Pasta and Sauce: Add the drained pasta to the skillet, tossing it gently with the creamy mushroom sauce. Season with salt and pepper to taste. If the sauce needs more moisture, gradually add more reserved pasta water.

          Serve: Once everything is well combined and heated through, remove from heat. Garnish with fresh chopped parsley and extra Parmesan cheese, if desired.
