Creamy Garlic Mushroom Pasta

8 oz (225g) fettuccine or spaghetti

2 tablespoons olive oil

4 cloves garlic, minced

8 oz (225g) mushrooms, sliced (preferably a mix of cremini and shiitake)

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and black pepper, to taste

1 cup heavy cream

½ cup grated Parmesan cheese, plus extra for serving

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine or spaghetti according to package instructions until al dente. Reserve about ½ cup of pasta water, then drain the remainder and set aside.

    Sauté the Garlic and Mushrooms: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the sliced mushrooms to the skillet and cook until they are browned and have released their moisture, about 5-7 minutes.

      Season and Combine: Sprinkle in the dried thyme and oregano, along with salt and pepper to taste. Stir to combine the seasonings with the mushrooms.

        Make it Creamy: Pour in the heavy cream and stir well. Allow the mixture to simmer for about 2-3 minutes until it slightly thickens. Add in the grated Parmesan cheese and stir until melted and creamy.

          Mix in the Pasta: Add the cooked pasta to the skillet and toss gently to coat it in the creamy mushroom sauce. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.
