1 can (15 oz) chickpeas, drained and rinsed

4 cups fresh spinach, roughly chopped

1 medium onion, finely chopped

4 cloves garlic, minced

1 cup coconut milk (or heavy cream for a non-vegan option)

2 tbsp olive oil

1 tsp ground cumin

1 tsp smoked paprika

½ tsp salt (or to taste)

Freshly ground black pepper, to taste

Juice of 1 lemon

½ cup vegetable broth (or chicken broth)

Fresh parsley or cilantro for garnish

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
