1 lb beef sirloin, thinly sliced

2 tbsp olive oil

4 tbsp unsalted butter, divided

1 medium onion, minced

4 cloves garlic, minced

8 oz cremini mushrooms, sliced

1 cup beef broth

1 cup heavy cream

1 tbsp Worcestershire sauce

1 tsp Dijon mustard

Salt and pepper, to taste

1 tsp fresh thyme, chopped (or ½ tsp dried thyme)

2 cups egg noodles

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Noodles: In a large pot, bring salted water to a boil and add the egg noodles. Cook according to package instructions until al dente, then drain and set aside.

    Sear the Beef: In a large skillet over medium-high heat, add the olive oil. Once hot, add the sliced beef sirloin in a single layer. Season with salt and pepper. Sear for about 2-3 minutes until browned. Remove the beef from the skillet and set aside.

      Sauté Aromatics: In the same skillet, reduce the heat to medium and add 2 tablespoons of butter. Once melted, add the minced onion and sauté for about 2-3 minutes until translucent. Add the minced garlic and sliced mushrooms, cooking for an additional 5 minutes until the mushrooms are tender.

        Make the Sauce: Pour in the beef broth, scraping up any browned bits from the skillet. Stir in the Worcestershire sauce, Dijon mustard, and thyme. Bring to a simmer and let it reduce for about 5 minutes.
