At its core, risotto is a dish made from Arborio rice, a short-grain rice that hails from Italy. The unique properties of Arborio rice make it essential for achieving the creamy texture that risotto is famous for. Unlike regular rice, Arborio rice has a high starch content, which is released during the cooking process. This starch is what gives risotto its characteristic creaminess, creating a comforting and luxurious dish.

Ingredients

1 ½ cups Arborio rice

4 cups vegetable broth (preferably low sodium)

2 cups sliced cremini mushrooms

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup dry white wine (optional)

1 cup grated Parmesan cheese

½ cup heavy cream

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Base: In your crockpot, combine the Arborio rice, sliced mushrooms, chopped onion, minced garlic, thyme, rosemary, salt, and pepper. Drizzle with olive oil and stir gently to combine all the ingredients.

Add the Liquids: Pour in the vegetable broth and white wine (if using). Stir everything together to ensure the rice is fully submerged in the liquid.

Cook Low and Slow: Cover the crockpot and set it to low heat. Let it cook for about 4 hours, stirring occasionally. The risotto is ready when the rice is tender and has absorbed most of the liquid.

Finish It Off: Once the rice is cooked, stir in the heavy cream and Parmesan cheese until creamy and well combined. Adjust the seasoning with additional salt and pepper to taste.

Garnish and Serve: Spoon the creamy risotto into bowls, garnish with fresh parsley, and add extra Parmesan on top if desired. Enjoy this comforting fall dish warm!
