Creamy Corn and Potato Chowder

Ingredients
  

2 cups fresh corn kernels (or frozen if out of season)

3 medium-sized potatoes, peeled and diced

1 large onion, chopped

2 cloves garlic, minced

1 carrot, diced

1 bell pepper (red or yellow), chopped

4 cups vegetable or chicken broth

1 cup heavy cream

1 tablespoon olive oil

1 teaspoon thyme (dried or fresh)

Salt and pepper to taste

Optional toppings: Chopped chives, crispy bacon, or shredded cheese

Instructions
 

Sauté the Veggies: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Then add the garlic, carrot, and bell pepper, and cook for another 3-4 minutes until the vegetables start to soften.

    Add Potatoes and Corn: Stir in the diced potatoes and corn kernels. Mix well to combine all the vegetables.

      Pour in the Broth: Add the vegetable or chicken broth to the pot. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook for about 15-20 minutes, or until the potatoes are tender.

        Blend for Creaminess: Once the potatoes are cooked, you can blend a portion of the chowder to make it creamy. Use an immersion blender directly in the pot or transfer about half of the chowder to a blender, then blend until smooth. (Be cautious as it will be hot!) Return it to the pot.

          Add Cream and Season: Stir in the heavy cream and thyme. Check for seasoning and add salt and pepper to taste. Let it simmer for another 5 minutes to heat through.

            Serve and Garnish: Ladle the chowder into bowls. Add your choice of toppings such as chopped chives, crispy bacon, or shredded cheese for extra flavor.
