Ingredients

2 cups cooked, shredded chicken

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 cup salsa

1 packet taco seasoning (or homemade if preferred)

1 cup sour cream

1 cup cream cheese, softened

2 cups shredded cheese (cheddar and Monterey Jack blend)

1 bag (10 oz) tortilla chips, slightly crushed

1/4 cup chopped fresh cilantro (optional)

1 avocado, diced (for topping)

Sliced jalapeños (for topping, optional)

Lime wedges (for serving)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Mix the Base: In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, and taco seasoning. Stir until well integrated.

Create the Creamy Mixture: In a separate bowl, combine the softened cream cheese with the sour cream until smooth. Fold this into the chicken mixture, ensuring everything is well-coated.

        Layer the Casserole:

          - In a large greased baking dish, spread half of the crushed tortilla chips as the first layer.

            - Pour half of the creamy chicken mixture on top of the chips and spread it out evenly.

              - Sprinkle one cup of the shredded cheese over the creamy layer.

                - Repeat the layers with the remaining crushed tortilla chips, followed by the remaining chicken mixture, and finish with the remaining cheese on top.

Bake the Casserole: Cover the baking dish with aluminum foil and bake for 20-25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Garnish and Serve: Once out of the oven, let the casserole sit for about 5 minutes. Garnish with chopped cilantro, diced avocado, and sliced jalapeños if desired. Serve with lime wedges on the side.
