3 cups cooked egg noodles

2 cups cooked, shredded chicken (rotisserie works great)

1 cup frozen peas (thawed)

1 cup chopped carrots (fresh or frozen)

1 can (10.5 oz) condensed cream of mushroom soup

1 cup sour cream

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon black pepper

½ teaspoon salt

½ cup breadcrumbs

2 tablespoons olive oil or melted butter

Fresh parsley for garnish (optional)

Instructions
 

Preheat the oven to 350°F (175°C) and grease a 9x13 inch casserole dish.

    Cook the noodles according to package instructions until al dente. Drain and set aside.

      In a large mixing bowl, combine the cooked egg noodles, shredded chicken, thawed peas, chopped carrots, cream of mushroom soup, sour cream, ½ cup of the shredded cheddar cheese, garlic powder, onion powder, black pepper, and salt. Stir everything together until well combined.

        Transfer the mixture into the greased casserole dish, spreading it evenly.

          In a separate small bowl, mix the breadcrumbs with olive oil or melted butter. This will help them become golden and crispy during baking.

            Sprinkle the breadcrumb mixture evenly over the top of the casserole, followed by the remaining ½ cup of shredded cheddar cheese.

              Cover the casserole with aluminum foil and bake it in the preheated oven for 25 minutes.

                After 25 minutes, remove the foil and continue baking for an additional 15-20 minutes, or until the cheese is melted and bubbly, and the breadcrumbs are golden brown.

                  Remove from the oven and let it cool for about 5 minutes before serving. Garnish with fresh parsley if desired.
