8 oz (225g) pasta (fettuccine or penne works well)

2 ripe avocados, halved and pitted

1 cup cooked chicken, shredded (can use rotisserie chicken)

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1/2 cup fresh basil leaves

1/4 cup grated Parmesan cheese (plus more for serving)

1/4 cup olive oil

1 tablespoon lemon juice

Salt and pepper to taste

Red pepper flakes (optional, for a kick)

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Prepare the Avocado Sauce: In a blender or food processor, combine the ripe avocados, garlic, fresh basil, olive oil, lemon juice, and Parmesan cheese. Blend until smooth and creamy, adding a bit of the reserved pasta water if needed to achieve your desired consistency. Season with salt and pepper to taste.

      Combine Chicken and Pasta: In a large mixing bowl, combine the cooked pasta with shredded chicken. Pour the creamy avocado sauce over the pasta and chicken, mixing well to ensure everything is coated. If the sauce is too thick, add more reserved pasta water to thin it out.
