2 cups cooked chicken, shredded (rotisserie works great)

1 cup long grain white rice, uncooked

4 cups low-sodium chicken broth

1 cup cream of mushroom soup (or homemade)

1 cup milk

1 medium onion, diced

2 cloves garlic, minced

1 cup frozen mixed vegetables (peas, carrots, and corn)

1 teaspoon Italian seasoning

½ teaspoon paprika

½ teaspoon black pepper

1 cup shredded cheddar cheese

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent (about 5 minutes). Add the minced garlic and cook for another minute until fragrant.

      Combine Ingredients: In a large mixing bowl, combine the shredded chicken, uncooked rice, sautéed onion and garlic, mixed vegetables, cream of mushroom soup, milk, chicken broth, Italian seasoning, paprika, and black pepper. Stir well to ensure all ingredients are evenly mixed.

        Prepare Baking Dish: Lightly grease a 9x13 inch baking dish. Pour the rice and chicken mixture into the dish, spreading it out evenly.

          Bake: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

            Add Cheese: After 30 minutes, remove the foil, sprinkle the shredded cheddar cheese evenly over the top, and return the dish to the oven. Bake uncovered for an additional 15-20 minutes, or until the rice is tender and the cheese is melted and bubbly.

              Garnish and Serve: Once baked, remove from the oven and allow it to cool for a few minutes. Garnish with freshly chopped parsley, then serve warm.
