8 ounces elbow macaroni (or gluten-free pasta)

2 cups sharp cheddar cheese, grated

1 cup cream cheese, softened

1 cup milk (or a dairy-free alternative)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Dijon mustard

Salt and pepper to taste

½ teaspoon paprika (optional, for garnish)

¼ cup breadcrumbs (for topping)

2 tablespoons olive oil

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Prepare Cauliflower: While the pasta cooks, steam the cauliflower florets until tender but still firm, about 5-7 minutes. Drain and let cool slightly.

      Blend the Cheese Sauce: In a blender or food processor, combine the steamed cauliflower, cream cheese, milk, garlic powder, onion powder, Dijon mustard, salt, and pepper. Blend until the mixture is completely smooth and creamy.

        Combine Pasta and Sauce: In a large mixing bowl, combine the cooked macaroni and the blended cauliflower cheese sauce. Stir in the grated sharp cheddar cheese and mix until the pasta is well coated.
