1 lb (450g) carrots, peeled and chopped

1 medium onion, diced

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 cups vegetable or chicken broth

1 cup coconut milk

2 tablespoons olive oil

1 teaspoon ground cumin

1/2 teaspoon ground coriander

Salt and pepper to taste

Fresh cilantro for garnish (optional)

A squeeze of lime juice (optional)

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and grated ginger, sautéing for another minute until fragrant.
