Creamy Caprese Pasta Salad

12 oz farfalle pasta (bow-tie pasta)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1/2 cup fresh basil leaves, torn

1/2 cup creamy dressing (see recipe below)

1/4 cup balsamic glaze

2 tablespoons extra-virgin olive oil

Salt and pepper to taste

Optional: Pine nuts or walnuts for added crunch

Creamy Dressing:

1/2 cup mayonnaise

1/4 cup Greek yogurt

1 tablespoon lemon juice

1 teaspoon garlic powder

Salt and pepper to taste

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the farfalle pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Creamy Dressing: In a small bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, garlic powder, salt, and pepper until smooth and well combined. Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, combine the cooked pasta, halved cherry tomatoes, mozzarella balls, and torn basil leaves. If using, add in pine nuts or walnuts for an extra crunch.

        Dress the Salad: Pour the creamy dressing over the pasta mixture. Gently toss everything together until all the ingredients are coated evenly.

          Finalize the Flavor: Drizzle the olive oil and balsamic glaze over the salad, then season with salt and pepper to taste. Toss gently to combine.

            Chill and Serve: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled, garnished with additional basil and a drizzle of balsamic glaze if desired.
