8 oz penne pasta

1 lb Cajun sausage (Andouille or smoked sausage), sliced

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (14.5 oz) diced tomatoes (with juices)

1 cup heavy cream

1 cup chicken broth

2 tsp Cajun seasoning (adjust to taste)

1 tsp paprika

1/2 tsp black pepper

1/2 cup grated Parmesan cheese

2 tbsp olive oil

Salt to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil and cook the penne pasta according to package instructions. Drain and set aside.

    Sauté the Sausage: In a large skillet, heat olive oil over medium heat. Add the sliced Cajun sausage and cook for about 5-7 minutes until browned. Remove from skillet and set aside.

      Cook the Vegetables: In the same skillet, add diced onion and bell pepper. Sauté for about 3-4 minutes until softened, then add minced garlic and cook for an additional 1 minute until fragrant.

        Combine Ingredients: Stir in the diced tomatoes (with their juices) and chicken broth. Add Cajun seasoning, paprika, and black pepper. Bring the mixture to a simmer for about 5 minutes, allowing the flavors to meld.
