Creamy Cajun Chicken Pasta

12 oz fettuccine or penne pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 tablespoon Cajun seasoning (adjust for spice preference)

Salt and pepper to taste

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the pasta: In a large pot of salted boiling water, cook the fettuccine (or penne) according to package instructions until al dente. Drain and set aside.

    Prepare the chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken pieces with Cajun seasoning, salt, and pepper. Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté vegetables: In the same skillet, add a bit more olive oil if needed, then add the diced onion and sliced red bell pepper. Sauté for 3-4 minutes until the vegetables start to soften. Add the minced garlic and cook for an additional minute, until fragrant.

        Make the sauce: Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and let it simmer for about 3-5 minutes until the sauce thickens slightly.

          Combine pasta and chicken: Reduce the heat to low, and add the cooked pasta, chicken, and halved cherry tomatoes to the skillet. Toss everything together to ensure it is well coated in the creamy sauce.

            Add cheese: Gradually stir in the grated Parmesan cheese until melted and creamy. Taste, and adjust seasoning with more salt, pepper, or Cajun seasoning as desired.
