Creamy Broccoli Wild Rice Soup

1 cup wild rice, rinsed and drained

4 cups vegetable broth

1 medium onion, diced

2 cloves garlic, minced

2 cups broccoli florets (fresh or frozen)

1 medium carrot, diced

1 medium potato, diced (Yukon gold or russet)

1 cup coconut milk (or heavy cream for a richer version)

2 tbsp olive oil

1 tsp dried thyme

1 tsp dried basil

Salt and pepper to taste

Optional: 1 tbsp lemon juice for brightness

Fresh parsley, chopped, for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

    Stir in the dried thyme and basil, allowing the herbs to bloom in the oil before adding the remaining ingredients.

      Add the diced carrot, potato, and wild rice to the pot. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let simmer for about 30-35 minutes, or until the rice is tender.

        After 30 minutes, add the broccoli florets to the pot and continue to simmer for another 10 minutes. The broccoli should be tender but still vibrant in color.

          Once all the veggies and rice are cooked, stir in the coconut milk (or heavy cream). Bring the soup back to a gentle simmer to warm through. If using, add the lemon juice to brighten the flavors.

            Season with salt and pepper to taste, adjusting as necessary.

              For a creamier texture, you can use an immersion blender to puree a portion of the soup, or carefully blend a cup or two in a countertop blender, then return it to the pot.

                Serve hot, garnished with fresh parsley for a beautiful presentation.
