1 cup uncooked brown rice

2 cups vegetable broth

1 cup sharp cheddar cheese, shredded

1 cup cream cheese, softened

1 cup milk (whole or low-fat)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon smoked paprika (optional for a smoky flavor)

1 cup panko breadcrumbs

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Rice: In a medium saucepan, bring the vegetable broth to a boil. Add the uncooked brown rice, cover, and simmer for about 40-45 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered for an additional 10 minutes.

      Blanch the Broccoli: While the rice is cooking, bring a pot of water to a boil. Add the broccoli florets and blanch for about 2-3 minutes until they turn bright green. Drain and immediately transfer them to an ice water bath to stop cooking. Drain again and set aside.

        Make the Creamy Mixture: In a large mixing bowl, combine the softened cream cheese, milk, garlic powder, onion powder, salt, black pepper, and smoked paprika. Whisk until smooth and well combined.

          Combine Ingredients: In a large mixing bowl, add the cooked rice, blanched broccoli, and half of the shredded cheddar cheese. Pour the creamy mixture on top and fold gently until everything is evenly coated.
