8 oz fettuccine pasta

6 strips of bacon, diced

3 cups fresh spinach, washed and roughly chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.

    Cook the Bacon: In a large skillet or frying pan over medium heat, add the diced bacon. Cook until crispy and golden brown, about 6-8 minutes. Remove the bacon with a slotted spoon and let it drain on paper towels, leaving the drippings in the pan.

      Sauté the Spinach and Garlic: To the skillet with the bacon drippings, add the olive oil and heat over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the chopped spinach and cook until wilted, about 2-3 minutes.

        Make the Sauce: Lower the heat and add the heavy cream to the skillet. Stir continuously for about 2 minutes, allowing the cream to heat through. Gradually add the grated Parmesan cheese, whisking until melted and smooth. If desired, add red pepper flakes for a touch of heat. Season with salt and pepper to taste.

          Combine Pasta & Bacon: Add the cooked fettuccine and crispy bacon to the sauce in the skillet. Toss everything together until the pasta is well coated in the creamy sauce. If the sauce is too thick, you can add a splash of pasta water to reach your desired consistency.
