12 oz (340g) pasta (linguine or spaghetti preferred)

2 ripe avocados, halved and pitted

1/4 cup fresh lime juice (about 2-3 limes)

1/2 cup fresh basil leaves, packed

2 cloves garlic, minced

1/4 cup grated Parmesan cheese (optional, for a vegan version, omit)

1/4 cup extra virgin olive oil

1/2 tsp salt (more to taste)

1/4 tsp black pepper (more to taste)

1/4 tsp red pepper flakes (optional, for heat)

Zest of 1 lime (for garnish)

Cherry tomatoes (halved, for garnish)

Extra basil leaves (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Sauce: While the pasta is cooking, scoop the avocado flesh into a food processor. Add fresh lime juice, basil leaves, minced garlic, Parmesan cheese (if using), olive oil, salt, black pepper, and red pepper flakes. Blend until smooth and creamy. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency.

      Combine: In a large bowl, toss the cooked pasta with the avocado sauce until evenly coated. Adjust seasoning with additional salt and pepper if needed. If the sauce is too thick, gradually stir in more reserved pasta water until creamy.

        Serve: Plate the pasta and garnish with lime zest, halved cherry tomatoes, and additional basil leaves. Serve immediately for the best flavor and texture.
