Ingredients

4 medium zucchini (zoodles)

2 tablespoons olive oil

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup cooked chicken breast, shredded (optional for protein)

Fresh parsley, chopped (for garnish)

Instructions

Prepare Zoodles: Start by spiralizing the zucchini into zoodles using a spiralizer. If you don’t have one, you can use a vegetable peeler to create thin ribbons. Set aside.

Heat Oil: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and red pepper flakes (if using). Sauté for about 1-2 minutes until the garlic is fragrant, being careful not to let it brown.

Add Zoodles: Add the zoodles to the skillet and cook for about 3-4 minutes, tossing frequently until they are tender but still al dente. Remove the zoodles from the skillet and set aside.

Make Alfredo Sauce: In the same skillet, pour in the heavy cream and bring it to a gentle simmer. Reduce the heat to low and gradually whisk in the grated Parmesan cheese until melted and creamy. Add the Italian seasoning and season with salt and pepper to taste.

Combine Ingredients: Stir the cooked chicken (if using) into the sauce, then add the zoodles back into the skillet. Toss everything together until the zoodles are well-coated with the Alfredo sauce.

Serve: Remove from heat, plate your creamy Alfredo zoodles, and garnish with fresh chopped parsley. Serve immediately.
