Creamy Alfredo Lasagna Roll Ups

10 large lasagna noodles

2 cups ricotta cheese

1 cup shredded mozzarella cheese (plus extra for topping)

1/2 cup grated Parmesan cheese

1 cup fresh spinach, chopped

1/4 cup fresh basil, chopped

2 cups Alfredo sauce (homemade or store-bought)

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Olive oil for drizzling

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Lasagna Noodles: In a large pot, bring salted water to a boil. Add the lasagna noodles and cook according to package instructions until al dente. Drain and lay noodles flat on a clean kitchen towel.

      Make the Filling: In a medium mixing bowl, combine ricotta cheese, 1 cup mozzarella cheese, Parmesan cheese, chopped spinach, fresh basil, garlic powder, onion powder, salt, and pepper. Mix until well combined.

        Assemble the Roll-Ups: Spread a thin layer of Alfredo sauce on the bottom of a 9x13 inch baking dish. Take one lasagna noodle and spread about 2-3 tablespoons of the cheese filling along the length of the noodle. Carefully roll it up and place seam-side down in the baking dish. Repeat with remaining noodles.

          Add the Sauce: Once all the roll-ups are in the baking dish, pour the remaining Alfredo sauce evenly over the top. Sprinkle with remaining mozzarella cheese.

            Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Then, uncover the dish and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

              Serve: Remove from the oven and let cool for about 5 minutes before serving. Drizzle with a little olive oil and garnish with extra fresh basil if desired.
