2 cups dried white beans (such as cannellini or great northern), rinsed and soaked overnight

1 medium onion, diced

3 cloves garlic, minced

2 large carrots, diced

2 celery stalks, diced

1 medium potato, diced

6 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper, to taste

2 cups fresh spinach (optional, for added greens)

Juice of 1 lemon

Grated Parmesan cheese (optional, for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Beans: Drain the soaked white beans and set aside.

    Sauté Vegetables: In the slow cooker, add the diced onion, garlic, carrots, celery, and potato. If your slow cooker has a sauté option, you can briefly sauté these first for enhanced flavor (about 5-7 minutes).

      Combine Ingredients: Add the soaked beans, vegetable broth, thyme, rosemary, and bay leaf to the slow cooker. Stir well to combine all ingredients.

        Season: Season with salt and pepper to taste, but keep in mind that you can adjust this seasoning later.

          Cook: Cover and cook on low for 8 hours or on high for 4 hours. The soup is ready when the beans are tender and the flavors have melded together perfectly.

            Add Greens: About 15 minutes before serving, if you’re using spinach, stir it into the soup and allow it to wilt.

              Finish & Serve: Remove the bay leaf and stir in the lemon juice for a bright finish. Taste and adjust seasoning if necessary.

                Garnish: Serve hot, garnished with grated Parmesan cheese and fresh parsley for added flavor.
