1 loaf of gingerbread bread (or regular bread with gingerbread spices)

6 large eggs

2 cups milk (or non-dairy milk)

1/2 cup brown sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup chopped pecans or walnuts (optional)

1/2 cup raisins or dried cranberries (optional)

Powdered sugar for dusting

Maple syrup for serving

Prepare the Bread: Preheat your oven to 350°F (175°C). Slice the gingerbread bread into 1-inch cubes and place it in a greased 9x13-inch baking dish. If you want to add some texture, sprinkle the chopped nuts and dried fruits evenly over the bread cubes.

    Make the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, brown sugar, vanilla extract, cinnamon, ground ginger, nutmeg, and salt until well combined.

      Combine: Pour the egg mixture evenly over the bread cubes, making sure each piece is well-coated. Press down gently with a spatula to ensure all the bread absorbs the mixture.

        Soak: Cover the baking dish with aluminum foil and let it soak in the refrigerator for at least 30 minutes (or up to overnight) to give the bread time to absorb the egg mixture.

          Bake: Once ready to bake, remove the foil and place the dish in the preheated oven. Bake for 35-40 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.

            Serve: Remove from the oven and let it cool for a few minutes. Dust with powdered sugar and serve warm with a drizzle of maple syrup.
