6 cups stale bread (such as brioche or challah), cubed

1 can (15 oz) pure pumpkin puree

4 large eggs

2 cups whole milk

1 cup heavy cream

1 cup granulated sugar

1 teaspoon vanilla extract

2 teaspoons ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1/4 teaspoon salt

Optional: 1/2 cup raisins or chopped nuts (walnuts or pecans)

Whipped cream or vanilla ice cream for serving

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter or non-stick spray.

    Prepare Bread: Place the cubed stale bread in a large bowl. If the bread isn’t quite stale, you can dry it out in the oven for about 10 minutes.

      Make Custard Mixture: In a separate bowl, whisk together the pumpkin puree, eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, nutmeg, ginger, cloves, and salt until well combined.

        Combine Ingredients: Pour the custard mixture over the cubed bread and gently press down with a spatula or your hands to ensure all the bread is soaked. If desired, fold in raisins or nuts at this stage.

          Let It Sit: Allow the mixture to sit for about 15-20 minutes. This gives the bread time to absorb the custard mixture.

            Bake: Pour the soaked bread pudding mixture into the prepared baking dish. Bake in the preheated oven for 45-55 minutes, or until the center is set and a knife inserted comes out clean. The top should be golden brown.

              Cool and Serve: Remove from the oven and let it cool for about 10 minutes. Serve warm, topped with whipped cream or vanilla ice cream if desired.

                Store Leftovers: Keep any leftovers in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
