Cottage Cheese Egg Bites

1 cup cottage cheese

6 large eggs

1 cup spinach, chopped

1/2 cup bell peppers, diced (red, yellow, or green)

1/4 cup green onions, finely sliced

1/2 tsp garlic powder

1/4 tsp black pepper

1/2 tsp salt (or to taste)

1/2 cup shredded cheese (cheddar, mozzarella, or your favorite blend)

Cooking spray or olive oil for greasing the muffin tin

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a muffin tin by greasing it well with cooking spray or a light coat of olive oil.

    Blend the Cottage Cheese: In a mixing bowl, combine the cottage cheese and eggs. Use a whisk or immersion blender to blend until smooth and well incorporated.

      Mix in Veggies and Spices: Add the chopped spinach, diced bell peppers, green onions, garlic powder, black pepper, and salt to the cottage cheese mixture. Stir until everything is evenly distributed.

        Add Cheese: Fold in the shredded cheese of your choice, ensuring it is well mixed into the egg and veggie blend.

          Pour into Muffin Tin: Carefully pour the mixture into the prepared muffin tin, filling each cup about 3/4 full. This will allow enough room for them to rise without spilling over.

            Bake in the Oven: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the egg bites are puffed, set in the center, and lightly golden around the edges.

              Cool and Serve: Once done, remove the muffin tin from the oven and let the egg bites cool for about 5 minutes. Carefully run a knife around the edges to loosen them before gently removing them from the tin.

                Storage: Serve warm, or allow to cool completely before storing in an airtight container in the refrigerator for up to 4 days. They can also be frozen for longer storage—simply reheat in the microwave or oven before serving.
