1 cup cottage cheese

6 large eggs

1 cup fresh spinach, chopped

1 medium bell pepper, diced (red or green)

1/2 cup onion, finely chopped

1 cup cherry tomatoes, halved

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon paprika

1/2 cup shredded mozzarella cheese (optional for topping)

Fresh herbs for garnish (like chives or parsley)

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Veggies: In a skillet over medium heat, sauté the chopped onion and bell pepper for about 5-7 minutes until they are soft. Add the chopped spinach and cook for another 2 minutes until wilted. Remove from heat.

      Mix the Eggs: In a large mixing bowl, whisk together the eggs, cottage cheese, garlic powder, salt, black pepper, and paprika until well combined. The mixture should be smooth and creamy.

        Combine Ingredients: Fold in the sautéed vegetables and halved cherry tomatoes into the egg and cottage cheese mixture. Ensure the veggies are evenly distributed.

          Prepare the Baking Dish: Lightly grease a 9x9-inch (or similar size) baking dish with cooking spray or olive oil.
