Cottage Cheese Egg Bake

1 cup cottage cheese

6 large eggs

1 cup shredded cheddar cheese

1 cup fresh spinach, chopped

1 red bell pepper, diced

1 small onion, finely chopped

1 clove garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup milk (or plant-based milk)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x9 inch baking dish or a similar oven-safe dish with cooking spray or olive oil.

    Sauté Veggies: In a medium skillet, heat a teaspoon of olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 3-4 minutes until softened. Add minced garlic and chopped spinach, cooking for an additional 2 minutes until the spinach wilts. Remove from heat and let cool slightly.

      Mix the Egg Mixture: In a large mixing bowl, whisk together the eggs, cottage cheese, milk, dried oregano, salt, and black pepper until well combined.
