Corn & Avocado Salad with Honey Lime Dressing

Ingredients
  

2 cups fresh corn kernels (about 4 ears)

1 ripe avocado, diced

1 small red onion, finely chopped

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/4 cup fresh cilantro, chopped

1 lime, juiced

2 tablespoons honey

3 tablespoons olive oil

Salt and pepper to taste

Optional: crumbled feta cheese for garnish

Instructions
 

Prepare the Corn: If using fresh corn, bring a pot of salted water to a boil. Add the corn kernels and blanch for about 2-3 minutes until tender. Drain and let cool. If using canned or frozen corn, simply rinse and drain well.

    Combine the Veggies: In a large mixing bowl, combine the cooled corn, diced avocado, chopped red onion, halved cherry tomatoes, diced cucumber, and chopped cilantro.

      Make the Dressing: In a small bowl, whisk together the lime juice, honey, and olive oil until well combined. Season with salt and pepper to taste.

        Toss Everything Together: Pour the dressing over the salad mixture and gently toss to combine, ensuring that the avocado remains intact as much as possible.
