Ingredients

2 cups dark chocolate chips (or semisweet, your choice)

1 cup white chocolate chips

1 teaspoon peppermint extract

1/2 cup crushed mint chocolate candies (like Andes mints or Junior Mints)

Pinch of sea salt

Optional: extra mint leaves for garnish

Instructions

Prepare the Baking Sheet: Line a 9x13 inch baking dish or a baking sheet with parchment paper. Make sure it hangs over the edges for easy removal later.

Melt the Dark Chocolate: In a microwave-safe bowl, place the dark chocolate chips. Heat in the microwave in 30-second intervals, stirring in between until completely melted and smooth. Ensure you don’t overheat to avoid burning.

Pour and Spread: Pour the melted dark chocolate into the prepared baking dish. Using a spatula, spread it evenly into a rectangle, about 1/4 inch thick. Allow it to cool and set slightly for about 10 minutes at room temperature.

Prepare the White Chocolate: In another microwave-safe bowl, melt the white chocolate chips using the same method. Stir in the peppermint extract once melted and smooth.

Pour the White Chocolate over Dark Chocolate: Drizzle or pour the melted white chocolate over the hardened dark chocolate layer. Use a spatula to gently swirl the two chocolate layers together for a marbled effect, being careful not to mix too vigorously.

Add Mint Chocolate Candies: Sprinkle the crushed mint chocolate candies evenly over the top, pressing them in lightly with your fingertips. Finish by adding a pinch of sea salt to enhance the flavor.

Set the Bark: Place the baking dish in the refrigerator to cool completely and harden, about 1-2 hours.

Break into Pieces: Once fully set, remove the bark from the fridge and carefully lift it from the baking dish using the parchment paper. Break it into large pieces or cut with a sharp knife into squares.

Garnish (Optional): If using mint leaves, finely chop a few and sprinkle over the top for a fresh touch.

Serve & Enjoy: Store any leftovers in an airtight container in the fridge to keep it fresh. Enjoy your refreshing mint chocolate chip bark as a treat for yourself or as a delightful gift!
