For the Cookie Monster Cake:

1 box of blue velvet cake mix

3 large eggs

1 cup buttermilk

1/2 cup vegetable oil

1 teaspoon vanilla extract

For the Cookie Dough Filling:

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 teaspoon vanilla extract

2 cups all-purpose flour

1 tsp baking soda

1/2 teaspoon salt

1 cup mini chocolate chips

For the Blue Buttercream Frosting:

1 cup unsalted butter, softened

4 cups powdered sugar

1/4 cup heavy cream

2 teaspoons vanilla extract

Blue food coloring

To Decorate:

Cookie crumbs (for a sand look)

Extra mini chocolate chips

Mini chocolate chip cookies (store-bought or homemade)

Instructions
 

Prepare the Cake:

    Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the blue velvet cake mix, eggs, buttermilk, vegetable oil, and vanilla extract. Mix until well combined and smooth.

      Bake the Cake:

        Divide the batter evenly into two 9-inch round cake pans greased with non-stick cooking spray. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

          Make the Cookie Dough Filling:

            In a large bowl, beat the softened butter, brown sugar, and granulated sugar until creamy. Add the vanilla, then mix in the flour, baking soda, and salt until combined. Fold in the mini chocolate chips. Chill the cookie dough in the refrigerator for about 30 minutes.

              Prepare the Frosting:

                In a large mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, alternating with the heavy cream, and mix until smooth. Add the vanilla extract and blue food coloring, adjusting the color to your desired shade of blue.

                  Assemble the Jars:

                    Crumble the cooled blue velvet cake into large, fluffy pieces. In a mason jar, layer as follows: start with a layer of blue velvet cake, then add a layer of cookie dough filling, followed by a layer of blue buttercream frosting. Repeat the layers until the jars are filled, finishing with a layer of frosting on top.

                      Decorate:

                        Sprinkle cookie crumbs on the top layer of the frosting to resemble “sand”. Add a few mini chocolate chips and a mini cookie to the top for decoration. Repeat for additional jars.

                          Serve:
