Ingredients

8 oz elbow macaroni

1 (12 oz) can of tuna in olive oil, drained and flaked

1 cup frozen peas, thawed

1/2 cup red bell pepper, finely chopped

1/2 cup celery, finely chopped

1/4 cup red onion, finely diced

1 cup mayonnaise

2 tbsp Dijon mustard

1 tbsp apple cider vinegar

1 tsp garlic powder

1/2 tsp black pepper

Salt to taste

2 tbsp fresh dill, chopped (or 1 tbsp dried dill)

Optional: 1/4 cup sweet pickle relish

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

Prepare the Veggies: While the pasta is cooking, chop the red bell pepper, celery, and red onion. Set aside in a large mixing bowl.

Mix the Dressing: In a separate small bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, black pepper, and salt. Whisk until fully blended to create a creamy dressing.

Combine Ingredients: In the bowl with the chopped vegetables, add the flaked tuna, thawed peas, and cooled macaroni. If using, add the sweet pickle relish.

Add the Dressing: Pour the dressing over the mixture and gently fold everything together until all ingredients are well coated.

Chill: Once combined, cover the bowl and refrigerate for at least 1 hour, allowing the flavors to meld and the salad to chill.

Finishing Touch: Just before serving, stir in the fresh dill. Adjust seasoning with more salt and pepper if needed.

Serve: Scoop portions into bowls or on a platter and serve cold. Enjoy your refreshing Cold Tuna Macaroni Salad!
