8 oz rice noodles

1 cup shredded carrots

1 cup red bell pepper, thinly sliced

1 cup cucumber, julienned

1 cup bean sprouts

1/4 cup fresh cilantro, chopped

3 green onions, sliced

1/4 cup roasted peanuts, crushed

For the dressing:

3 tbsp soy sauce

2 tbsp peanut butter

1 tbsp honey or maple syrup

2 tbsp rice vinegar

1 tbsp sesame oil

1 clove garlic, minced

1 tsp ginger, grated

Juice of 1 lime

1-2 tsp sriracha (adjust for spice preference)

Instructions
 

Cook the Noodles: Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions until al dente, about 4-5 minutes. Drain and rinse under cold water to stop cooking. Set aside.

    Prepare the Vegetables: While the noodles are cooking, prepare the veggies. Shred the carrots, slice the red bell pepper and scallions, and julienne the cucumber. Set them aside in a large mixing bowl.

      Make the Dressing: In a medium bowl, whisk together the soy sauce, peanut butter, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, grated ginger, lime juice, and sriracha until smooth and well combined.

        Combine Salad Ingredients: Add the cooked and drained rice noodles to the bowl with the prepared vegetables. Pour the dressing over the noodle and vegetable mixture. Toss gently until everything is combined and coated evenly.

          Garnish & Serve: Transfer the salad to a serving platter or individual bowls. Sprinkle with crushed roasted peanuts and chopped cilantro. You can also add extra lime wedges on the side for additional zest.

            Chill if Desired: For the best flavor, allow the salad to chill in the refrigerator for about 15-30 minutes before serving, giving the flavors time to meld.
