Cold Spinach Artichoke Pasta Salad

12 oz fusilli or rotini pasta

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and chopped

½ cup Greek yogurt (or sour cream for a richer flavor)

½ cup mayonnaise

1 cup grated Parmesan cheese

½ cup diced red onion

1 clove garlic, minced

1 tbsp lemon juice

1 tsp dried oregano

1 tsp salt

½ tsp black pepper

¼ cup sun-dried tomatoes, chopped (optional)

¼ cup black olives, sliced (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fusilli or rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Dressing: In a medium bowl, combine the Greek yogurt, mayonnaise, Parmesan cheese, minced garlic, lemon juice, oregano, salt, and pepper. Mix until well combined and creamy.

      Mix the Ingredients: In a large mixing bowl, add the cooled pasta, chopped spinach, artichoke hearts, diced red onion, sun-dried tomatoes (if using), and black olives (if using).

        Combine Everything: Pour the dressing over the pasta and vegetable mixture. Toss gently until all ingredients are thoroughly coated with the dressing. Taste and adjust seasoning if necessary.
