Cold Peanut Sesame Noodles

8 oz (230g) spaghetti or rice noodles

1/4 cup creamy peanut butter

2 tbsp soy sauce (or tamari for gluten-free)

1 tbsp sesame oil

1 tbsp rice vinegar

1 tbsp honey or maple syrup

1 clove garlic, minced

1 tsp fresh ginger, grated

1/4 cup hot water (for thinning the sauce)

1 cup shredded carrots

1 cup thinly sliced bell peppers (mixed colors)

1 cup snap peas, trimmed

3 green onions, chopped

1 tbsp sesame seeds, toasted

Fresh cilantro or basil, for garnish (optional)

Instructions
 

Cook the Noodles: Bring a pot of salted water to a boil. Add the spaghetti or rice noodles and cook according to package instructions until al dente. Drain the noodles and rinse under cold water to stop the cooking process. Set aside.

    Make the Sauce: In a medium mixing bowl, whisk together the peanut butter, soy sauce, sesame oil, rice vinegar, honey or maple syrup, minced garlic, and grated ginger. Slowly incorporate the hot water, whisking until you reach a smooth and pourable consistency.

      Combine Noodles and Veggies: In a large bowl, combine the cooled noodles, shredded carrots, bell peppers, and snap peas.

        Toss with Sauce: Pour the peanut sauce over the noodle and vegetable mixture. Toss everything together until the noodles and veggies are well coated with the sauce.

          Garnish and Serve: Sprinkle the chopped green onions and toasted sesame seeds over the top. If desired, add fresh cilantro or basil for an extra pop of flavor. Serve immediately or refrigerate for 30 minutes to chill further.
